I'm plowing ahead with menu-planning this year, and I've come up with too many things to make for 2 meals. I've been asked to contribute just one side dish and dessert, which is actually harder than just planning a whole meal because I want them to be THE BEST and there are so many great options to choose from:

Holy fresh produce deliciousness on my table and now, in my stomach. Clockwise: A roasted beet salad with fennel, red onions, oranges, a balsamic vinaigrette and feta cheese on top. YUM. Apple, strawberry, Valencia orange fruit salad. Mmmm. Steamed broccoli topped with cheddar cheese. FRESH. Can’t wait to tackle kale, artichokes, carrots, and new red potatoes.
